1-Hydrating watermelon salad

Besides being full of water, watermelons are also a surprisingly nutrient-dense food. They provide high levels of vitamins, minerals, and antioxidants all within just a small number of calories.
Ingredients

2 cups cubed watermelon
1 cup halved seedless grapes
1 cup snap peas, sliced on the diagonal
1/2 large cucumber, thinly sliced
1/2 cup Whole Natural Blue Diamond Almonds
2 tablespoons fresh mint leaves, torn
1-2 tablespoons extra-virgin olive oil
1/4 tsp. salt
1/4 tsp. red pepper flakes

2- Peach salad

I know many people aren’t into fruit on salads, but I’m begging you to give this recipe a chance! It’s packed with peaches, avocado, toasted almonds, goat cheese, red onion and a simple homemade balsamic vinaigrette, I hope u love this recipe it’s gonna be good.
Ingredients

4-6 cups organic spinach 2 large peaches, sliced 1 avocado, diced
1/2 small red onion, very thinly sliced
1/2 cup goat cheese crumbles
1/2 cup sliced toasted almonds*

3-Barccoli with pasta

This Easy Pasta with Broccoli Recipe is quick, easy, and so flavorful! one of my favorite pasta recipe. Loved by vegetarians!

1-Don’t overcook the broccoli! You only want to cook it for 4 to 5 minutes, or until tender and bright green. And don’t worry if it looks slightly undercooked, because it’ll continue cooking in the sauce later.

2-Another ingredient you don’t want to overcook? The pasta! Cook it until it’s al dente! The cooking time will vary slightly depending on the brand of pasta you’re using, so check the box for instructions.

3-If you really love lemon, you can add a teaspoon of lemon zest to the cooked pasta before serving.

4-Kohlrabi

Creamy Corn Kohlrabi Pasta
Now, today’s recipe uses kohlrabi (that alien looking turnip-like veggie in your CSA boxes and at the farmer’s market) and a simple, easy creamy corn sauce. And when I say creamy, that doesn’t mean dairy cream – it means pureed corn with a dash of vegetarians.

Seriously, I want to use this corn sauce on everything – even sandwiches! The corn is cooked with shallots, garlic, and red pepper flakes and then pureed to a perfect consistency and then tossed with the softened kohlrabi noodles and some reserved whole corn for a crunch!

If you’re looking to amp up the protein level here, toss in your favorite protein (chicken or shrimp would be great!) or enjoy this as a light dinner or lunch.

9 ingredients
1 cups Corn, kernels 1 Garlic clove
2 Kohlrabi, medium
1 Parsley
1 tbsp. Shallots
Canned Goods: 1/4 cup Vegetable broth + more
